Flavorful Cauliflower Steak with Chimichurri A Plant-Based Delight

Ingredients (Serves 2):

Cauliflower Steak:

  • 2 cauliflower steaks (from 1 large cauliflower)
  • 1 tbsp smoked paprika
  • 3 garlic cloves
  • 2 tbsp butter
  • Salt
  • Pepper
  • Olive oil

Chimichurri:

  1. Large bunch of parsley
  2. 1 garlic clove
  3. 1 red chili
  4. 2 tbsp red wine vinegar
  5. 100ml extra virgin olive oil
  6. Salt
  7. Pepper

Butter Bean Purée:

  • 700g butter beans (jarred is best)
  • 1 lemon
  • 1 garlic clove
  • 2 tbsp nutritional yeast
  • Salt
  • Pepper

Method:

  1. Begin by making the chimichurri. Finely chop the fresh herbs and add them to a mixing bowl. Dice the chili and mince the garlic, then add them to the herbs along with the red wine vinegar. Season to taste and slowly stream in the olive oil while mixing until thoroughly combined. Set aside.
  2. For the butter bean purée, simply pour the beans with their liquid into a blender. Add the juice of a lemon, salt, pepper, 1 garlic clove, and nutritional yeast. Blend until smooth and creamy.
  3. Next, prepare the cauliflower by slicing it into steaks. You should be able to get two steaks from the middle of a large cauliflower. Save the extra florets for another recipe or roast them with salt, pepper, paprika, and olive oil to serve alongside the steaks.
  4. Chop up the cauliflower leaves and stems and set them aside for a zero-waste garnish.
  5. Season the cauliflower steaks with salt, pepper, and paprika on both sides, then drizzle them with olive oil and massage well.
  6. Heat a frying pan over medium-high heat and add 2 tbsp of olive oil. Once hot, add the cauliflower steaks and press them down to sear. After several minutes, flip the steaks and fry the other side until golden brown.
  7. Crush the garlic cloves, add them to the pan with the butter, and baste the steaks continuously. Once the steaks are cooked, remove them from the pan and add the chopped leaves and stems with a splash more oil. Cook until golden and crisp.
  8. To serve, pour the butter bean purée onto the center of a plate. Place the cauliflower steak on top, drizzle with chimichurri, and scatter the cauliflower leaves over the dish.
